Equipment: Electric skillet or MP5
Ingredients:
2 1/2 pounds of beef sirloin or chuck roast (about 2" thick)
Pepper, to taste
1 onion*
1-4 pieces of celery*
3-6 red potatoes*
6 medium carrots*
1 tablespoon of balsamic vinegar, optional
*Cut pieces into your own preferred sizes. Potatoes can be left whole. I used the #5 cone for the carrots and potatoes and chopped celery and onions into 1" pieces and various sizes.
Directions:
Preheat Electric skillet or MP5/slow cooker to 350 degrees. Place meat on hot skillet. Cover and seat for 6 minutes then turn over and brown other side for 3 minutes.
Sprinkle pepper on top. Arrange onion and celery on top of meat and place carrots and potato on the sides. Place lid on top and wait for the click. Let it keep clicking until it sticks straight up. Wait 5-10 minutes before turning it down to 185 degrees.
Leave on for 1.5 hours or longer if desired.
Cut beef across the grain and stir vinegar into juices and drizzle over beef.
(Goes great with flavored rice or orzo.)
