Ingredients:
8 cups of beef broth
1/2 onion cut into large pieces
Sliced ginger for broth flavor
2 carrots sliced
Rice stick noodles
Leftover rotisserie chicken, diced
Add ons:
Bean sprouts
Cilantro
Basil
Green onions/chives
4 thinly sliced mushrooms
Instructions:
Boil broth, ginger and onion until onion is soft.
Cut up add ons.
Cook noodles as directed. Meanwhile, add carrots to broth and cook 7 minutes.
Stir in chicken, place lid on top and turn off burner. Keep on stove for a few minutes to warm chicken.
Place noodles in bowl, then broth, then add ons.
